A new wave of sustainable and nutritious snacks is emerging, thanks to the collaboration between Italian food-tech company KelpEat and Finnish innovator Solar Foods. This partnership has led to the creation of a groundbreaking seaweed cracker that boasts an impressive protein content exceeding 35%. The crackers are crafted using dried kelp sourced from European farms and enhanced with Solar Foods' proprietary Solein protein. This unique combination not only provides a complete amino acid profile but also includes essential vitamins and minerals such as B12, B9, calcium, and magnesium.
The production process of Solein stands out for its eco-friendly approach. Cultivated primarily using air and electricity, this microbial protein is produced through a specialized fermentation method developed by Solar Foods. With a remarkable 75% protein content, Solein is free from GMOs, dairy, gluten, and soya, making it an ideal ingredient for health-conscious consumers. The synergy between Solein and kelp creates a snack that not only tastes great but also offers significant nutritional benefits. KelpEat showcased this innovative product at the prestigious Pitti Taste food fair in Florence, Italy, and plans to expand its reach into the US market, where demand for high-protein products is particularly strong.
This new snack represents a major leap forward in sustainable food solutions. By leveraging Solein's production process, which is independent of land use, weather, or climate conditions, KelpEat aims to promote environmental responsibility and food sovereignty. The CEO of KelpEat, Luca Cerruti, emphasized the importance of this innovation in creating a future where nutrition and sustainability go hand in hand. The chief commercial officer at Solar Foods, Juan Manuel Benítez-García, highlighted the versatility of Solein, noting its potential to enhance various consumer products while maintaining familiar flavors. As the world seeks healthier and more sustainable food options, this collaboration sets a new standard for climate-positive foods, paving the way for a brighter, more nourishing future.
