The new establishment, nestled within the NorthPoint apartment complex adjacent to Cafe Rio in downtown Rexburg, will bring together three distinct culinary experiences under one roof. This innovative venture aims to provide residents and visitors with uninterrupted access to their favorite treats throughout the year.
The brainchild of entrepreneur Michael O’Neal, this project combines his successful Corndog Company, Lemon Smashers lemonade stand, and Dip Stix ice cream truck. Since launching the Corndog Company in Rexburg in 2019, O’Neal has expanded operations across eastern Idaho. Winter closures have long posed challenges for food truck operators in the region, but the new storefront promises continuous service regardless of seasonal weather conditions. “We’re thrilled about the opportunity to serve our community all year long,” O’Neal expressed, adding that he envisions this as the beginning of further expansion across eastern Idaho.
The grand opening celebration on Friday, January 17th, promises an exciting array of activities and promotions.
