Chonnie Richey, the founder of Independence Gardens, has offered a poignant insight into the difficulties faced by many families. "It's the constant battle between paying bills and putting food on the table," Richey said, highlighting the tough choices that households have to make in order to make ends meet. The holiday season adds an extra layer of financial pressure as rising food costs further strain already tight budgets.For children in vulnerable communities, the impact is particularly severe. Richey points out that in Title 1 schools, school meals often serve as the primary source of nutrition for many students. "When they return home during the holiday season, that school lunch might be the only fresh meal they get all day," she said. Once out of school, access to consistent and nutritious food becomes increasingly uncertain.
