Despite this, the Real Academia Española defines a quesadilla as a folded tortilla, sometimes filled with cheese and other ingredients. Oscar Rodriguez and his wife, Aidee Gonzalez, founded Tortas Insurgentes in 2004, driven by a desire to recreate the flavors of Mexico City. Starting from a small storefront inside a bakery on Henderson Ave., they have since expanded to five locations across Dallas, Garland, and Mesquite. Their journey has been marked by challenges, including a fire that destroyed one location and a severe car accident that left Rodriguez with extensive burns. After a long recovery involving 60 surgeries, Rodriguez returned to his passion for cooking. Today, he attributes the success of Tortas Insurgentes to love, stating, “The secret to good food is just that: only love.”
