In mid-January, a remarkable Asian-inspired food hall concept is set to make its way to Lakeland Linder International Airport. This exciting development comes as Lakeland commissioners unanimously voted to approve a lease agreement with Sora Eatery LLC for the second-floor space previously occupied by Waco Kitchen. Commissioner Stephanie Madden's curiosity about onigiri led to an introduction of this delicious Japanese rice ball delicacy.
Discovering the Delights of Omusubee
Ana Imai, a co-owner of Omusubee, passionately shared her love for onigiri. These little rice balls are stuffed with various sweet and savory fillings and wrapped in nori. "It's like a cozy little sushi ball, mostly cooked," she explained. Omusubee, a business familiar to Lakelanders at the Downtown Curb Market, will bring their onigiri along with other Asian-inspired foods like curry and taiyaki to the airport. Imai expressed her excitement and gratitude, believing that taiyaki and onigiri are perfect for the airport setting as they are easy to grab and go. Through Omusubee, she offers over 40 flavors of onigiri, ranging from traditional tuna mayo to locally inspired Angus beef brisket. Dessert waffles include anko (traditional red bean paste) and matcha, as well as the rich and indulgent Nutella. Sora Eatery LLC will have a five-year lease starting from January 1 for the 4,322-square-foot space on the second floor. The city is offering six months of rent-free period, after which the startup will owe a yearly rent of $51,864 or $4,322 per month. The fee includes utilities but not taxes. Under the contract, Sora is required to serve at least one meal a day, seven days a week. Commissioner Mike Musick expressed concern about the nature of the meals, ensuring it includes not only breakfast but also food available in conjunction with Avelo flights. Once the business reaches "profitability" (defined as yearly sales of at least $750,000 gross revenue), the city will collect an additional 6% annual concession fee.The History of the Space
The space had been vacant for over three years after Hallback's Bar and Grill closed in February 2019. It was finally occupied by Waco Kitchen in August 2022 but suddenly closed in April this year due to negotiations breaking down between the owner and a potential parent company. Lakeland then put out a request for proposals, but no one showed interest in taking over the restaurant space. Now, Sora aims to take off and find success alongside Lakeland's runways.Supporting the Airport Business
Commissioner Sara Roberts McCarley recalled the days when the airport was a place to take children after church and watch airplanes. With more airplanes now than 18 years ago, she highly recommended supporting businesses like Sora. She saw it as a natural fit for business meetings or get-togethers, with individuals coming from different places using the restaurant as a midpoint. The food hall plans to start with a soft opening in January, lasting at least 45 days. Airport Director Kris Hallstrand assured commissioners that the airport will assist Sora in hosting a grand opening celebration when they are ready. "Our airport is the welcome mat to our community," she said. "This is about showcasing our community's awesomeness and diversity. You can find anything you're looking for here in Lakeland."
