The journey began when Carolyne Lane, inspired by Chef René Redzepi's dedication to excellence, joined Noma as a barista. Despite the restaurant's focus on local Nordic ingredients, coffee stands out as an exotic exception. Last year, Noma started roasting its own beans under the Noma Kaffe label. This month marks a significant milestone as these premium coffees are being packaged for global distribution. Each shipment includes detailed information about the origin and brewing methods, ensuring an accessible yet sophisticated coffee experience at home. The monthly offerings highlight diverse producers, such as the Intzín family in Chiapas, Mexico, emphasizing both quality and sustainability.
