The Parkway Food Hall's journey began when the owners of the Parkway Promenade shopping center, Actis, faced the challenge of finding a new tenant for the vacant space left by the closure of Alfalfa's Market. Rather than settling for another traditional grocery store, the team saw an opportunity to create something truly unique – a food hall that would showcase the best of Longmont's culinary talent.With no prior experience in operating food halls, the Actis team embarked on a research mission, visiting numerous food halls across Colorado to gain insights and inspiration. Their efforts paid off when they connected with Pat Garza, the CEO of National Food Hall Solutions, who immediately recognized the potential of Longmont as a thriving food destination.

Curating a Diverse Lineup of Local Culinary Concepts

The Parkway Food Hall's success can be attributed to the careful curation of its vendor lineup. When the call went out for interested chefs and restaurateurs, the response was overwhelming, with more than double the number of applications than the space could accommodate.Among the eight carefully selected vendors is Baa Hachi, a concept dreamed up by the husband-and-wife team behind the acclaimed Farow restaurant in Niwot. Baa Hachi, which translates to "Bar 8" in Japanese, brings a taste of Japanese street food to Longmont, with offerings such as pork belly bao buns, kara age fried chicken, and tonkotsu ramen.Another standout is Chile con Quesadilla, a Denver-based food truck that has expanded into a brick-and-mortar location within the food hall. Owners Christina and Chris Richardson are excited to offer their unique take on Mexican-inspired cuisine, including outside-the-box creations like mac and cheese-filled tacos and quesadillas.

Crafting a Distinct Ambiance and Atmosphere

The Parkway Food Hall's design and ambiance are as much a draw as the culinary offerings. The team at Meridian 105, the architecture firm behind Edgewater Public Market and Avanti Food & Beverage, was tasked with transforming the former grocery store into a contemporary and industrial-inspired space.The result is a visually striking environment that seamlessly blends elements of Longmont's history and character. Polished concrete floors, blonde wood, and black metal accents create a sleek and modern aesthetic, while nods to the city's landmarks, such as the colorful selfie wall and historic photographs, add a touch of local flair.The centerpiece of the space is the spacious, U-shaped bar, which offers a wide selection of craft cocktails and exclusive beer collaborations with local breweries. The bar's roll-up doors and shaded patio provide a perfect setting for al fresco dining and socializing, further enhancing the community-centric atmosphere.

The Parkway Food Hall's menu caters to the diverse tastes of Longmont's residents and visitors. In addition to the Japanese-inspired offerings at Baa Hachi and the Mexican-fusion creations at Chile con Quesadilla, the food hall features a range of other culinary concepts, each bringing its own unique flavor profile to the table.For those craving barbecue, H3ersh3r offers a mouthwatering selection of cherrywood-smoked baby back ribs, pulled pork sandwiches, and loaded mac and cheese. Spice Fusion, a collaboration between the owners of Gurkhas in Longmont and Boulder, serves up a delectable fusion of Indian and Thai cuisine, with dishes like pad thai, curry, and tikka masala.Cleaver & Co. and Shawarma Shack, both expansions from Junction Food & Drink in Denver, round out the lineup with classic American fare and Middle Eastern-inspired bites, respectively. And for those with a sweet tooth, HipPops, a gelato-on-a-stick brand, provides a refreshing and customizable dessert option.
